Zucchini!




Since coming home from vacation we have been litterally drowning in zucchini. This spring, when we had filled compost into the planting boxes there were still 2 piles of badly rotted manure left, on which I decided to plant zucchini. Last year, not only did the seeds not germinate well, they barely bore any fruit, so I planted all my remaining last years seeds. I got 8 (!) plants, 4 for each manure pile. 


This is just a tiny fraction of the amount of zucchini I picked on the weedend we returned after being away for 10 days. There were about 7 huge (1.2 kg) zucchinis, equally many middle sized (600 gr) zucchinis and maybe a dozen of the small ones. I have been spending a LOT of time in the kitchen preparing zucchini related foods, and we are eating zucchini EVERY DAY  for dinner.

buckwheat with zucchini and cantarelles and a salad (with lettuce and rocket from the garden)


zuchini burgers, halloumi and corn on the cob on the grill. 

Besides these I have made a quiche with a zucchini crust and broccoli (from the garden) filling, zucchini gratin with whole wheat couscous and cheese, zucchini souffle with feta, rattatouille, and 6 bags of zucchini slices fried in oil and frozen for moussaka later this winter. 

And in spite of all this I have been giving away zucchini and zucchini cake to my neighbors and friends.
